We originally set out to make Oatally Awesome, first and foremost, a nutritious gourmet oatmeal and worked hard to add in tasty grains, nuts, berries and fruit to find the right balance of good nutrition and tasty eating. Steel-Cut Oats

Steel-cut oats share the same nutritional value as rolled oats or instant oats, but differs greatly in the way our body digests it. The steel-cut oat rates much lower on the glycemic index, as it is the whole grain (the inner portion of the oat kernel) that has been sliced with a steel blade.

The oat has been left intact making it difficult for our digestive enzymes to penetrate the outer shell to convert the inner starches (carbs) to sugar. The instant oat has been processed (steamed, rolled, re-steamed, and toasted) leaving a soft, flat grain that is easily penetrated by our digestive enzymes (almost instantly), converting the starches to sugar and therefore has a higher glycemic rating.

Higher glycemic foods are more likely to cause spikes in blood sugar and insulin resistance which associated with obesity, high blood pressure, high cholesterol and increased risk of type 2 diabetes. The many nutritional benefits of the steel cut oat, combined with the slow digestion process are the main reasons why our government recognizes and supports the "oat" as the only grain that helps to lower cholesterol and prevent heart disease.
